Peak Harmonic Cleanse Recipes
I’m ready for a relaunch into the New Year. I’ve been sharing after classes how sugar attached itself to my regular diet over the holidays and I’ve been having a hard time letting bad habits fade. I’m personally looking forward to the Peak Harmonic 21 Day Living Cleanse for a couple of reasons. For me this is as a way to get back on track, have weekly accountability check in, while finding some delicious recipes to incorporate into day to day life even as the 21 days pass by.
We don’t launch the cleanse until Saturday, but I’ve been curious about what type of meals and snacks the cleanse will consist of. I asked Peak Harmonic if we could get a sneak peek at some of the delicious whole foods we can look forward to in the coming weeks. They promptly sent over two drool worthy recipes: dinner and YES even dessert!!
Vegetarian Spaghetti- it's as hearty as spaghetti and meatballs.
1 clove Elephant Garlic
1 medium Red Onion
1 28oz can of unsalted Crushed Plum Tomatoes (I get the green can from trader joes)
1 medium Eggplant
1 tbsp (to taste) Fresh or Dried Herbs of Marjoram, Oregano, Thyme, Basil, Rosemary
1 tsp Real Salt
¼ cup Safflower oil
1 bag Brown Rice Spaghetti Noodles
Wash all the veggies and herbs (if fresh). Cut the eggplant into quarter size squares ( option to leave the peel on), finely chop elephant garlic, place both in a large sauce pan with 1/4 cup of safflower oil and simmer over medium heat for 10mins. Allow the eggplant to soak up all the oil.
Add the can of tomatoes, chopped red onion and dried herbs approximately1 tbsp to taste. If the herbs are fresh you don't need as much, just a small palm size of the loose herbs. You may also add a little extra Rosemary to enhance the flavor. Add 1 tsp of real salt. Stir and simmer on low for about 20-25 minutes stirring every 5mins.
You will need approximately 15 mins for the noodles. Bring a big pot of good quality water to boil (boils faster if covered). Add noodles and stir two to three times.
When noodles have been drained and rinsed you can mix the sauce and noodle together in the boiling pot before serving. Mix well and serve. Optional to add a sprig of fresh basil.
Additional option: If you’d like to add Parmesan on your pasta you can use a grated Pecorino Romano(trader joes) to top it off.
Raw Vegan Chocolate Mousse with Berry's
Blend 2 ripe avocados, 2 tbsp coconut oil, 1/4 cup grade B maple syrup, 2-4 tbsp raw cacao powder (to taste), 1/2 can full fat coconut milk. Really REALLY tasty!
