Wellness Wednesday- Freshly Caught Dinner
This one is for all of our Omnivores and Pescetarians. I just discovered the newest seafood source in Ventura Harbor. If you’re like me, I’m always looking for a yummy local and FRESH source for seafood. I love when the boats bring in the fresh Ahi in the spring, but I can’t possibly stock my freezer with enough fish to last me all year. So along comes Wild Local Seafood Co based in the Ventura Harbor! Their goal is to bring wild locally sourced AND sustanable seafood to Ventura.
I thought I’d be the guinea pig and test it out for all of you… tough job but someone’s gotta do it!
I’m happy to report that they offer a delicious assortment of seafood. Not only do they source it locally but they can even tell you what boat the catch came off of. I wanted to try something out of the box and per their recommendation I went with the buttery Black Cod as my first purchase. It was love at first bite… bonus is they were running a Grand Opening special on it!
I mixed up simple marinade from their recommendations and dished it up with some tasty sides.
Black Cod Recipe:
1lb Black Cod
¾ Cup Honey
½ Cup of Low Sodium Soy Sauce
⅓ cup of Apple Cider Vinegar
⅓ cup Sesame Seed Oil
1 tsp Freshly Ground Pepper
1 tsp Fresh Ginger
Mix all ingredients together, other than Cod. Place cod in a Ziploc bag and add liquid ingredients. Marinade for up to 24 hours.
To cook, preheat oven to 450ᵒ Place cod sans marinade on a baking sheet with parchment paper. Cook for 7-9 mins or until cod is nice and flakey.
Asparagus:
Drizzle with olive oil, sea salt and minced garlic. Bake in the same 450ᵒ degree oven for 15-20mins.
Salad:
Simple mixture of spinach, sliced avocado and cherry tomatoes; lightly drizzled with olive oil, balsamic and cracked pepper.
Delcious and quick dinner that is sure to satisfy the family!
