Wellness Wednesday- Apple Cinnamon Bites
Those warm summer nights are settling in and for me that means do anything to avoid turning the oven on. I’ve been trying to break the sweet tooth I’ve acquired over the last several years. From time to time I’ll experiment with some healthy “treat” options.
This no-bake Apple Cinnamon bites was a win/ win. It uses all natural ingredients and doesn’t require me to fire up the oven for the final product. Even better is these hardly last in my house for two days.
Check out this easy recipe. It comes together so quickly that you’ll be happy with yourself when you whip them up tonight!
2 cups Old-fashioned Oats
¼ cup Ground Flaxseed
¾ teaspoon Cinnamon
½ cup Peanut Butter (you can substitute with almond butter)
¼ cup Honey
1 teaspoon Vanilla Extract
pinch of salt
1 Grated Apple (red or green to your preference)
In a large bowl mix together the oatmeal, flaxseed, and cinnamon.
**Tip- I had whole flaxseed on hand. I attempted to grind this up in a food processor, with not much luck. If you have the same trouble the larger or whole flaxseed didn’t present a problem with my final recipe.
In an alternate bowl combine together the peanut butter, honey, vanilla extract and salt. Mix everything together and then pour on top of the dry ingredients.
Using your hands (run under the facet to help with the stickiness) mix the ingredients well. Once combined pour in grated apples. Leave any juice behind that may have gathered at the bottom of the bowl. Continue to use your hands to mix the apples in.
Taking small scoops of the mixture and form balls with your hands. Place in an air tight container. They are ready to eat immediately, but I found placing them in the refrigerator bound all the ingredients together.
Store in the refrigerator for up to 4 days.
