Wellness Wednesday- Seasonal Winter Salad


WELLNESS WEDNESDAY

Our very own Heather made this delicious salad that you for sure will want to add to your menu....here's the scoop!

Ingredients:

2 c. Spinach

1 large Sweet Potato

1 Green Apple (or Pear)

1/4 Red Onion

1/4 c. Honey Dijon Dressing

1/2 c. Dried Cranberries

1/2 c. Lightly Candied Pecans

2 tb/ Pomegrante Seeds

1 tbs. Honey

1 tbs. Olive Oil

Dash salt/pepper

Pre-heat Oven to 400°

Cut 1 large sweet potato into small 1 inch pieces. Toss in olive oil + honey, season w/salt and pepper. Roast on lowest oven rack for approximately 15 minutes or until crisp outside but fork soft. Meanwhile in a bowl, mix 1/4 cup of honey Dijon dressing with about 10 thinly sliced green apple or pear slices + same amount of red onion (sliced about same size as apple.) Gently mix to allow apples + onions to marinate in dressing. Add 2 cups of rinsed/spun dried spinach ontop of the mixture. Let marinate in refrigerator while you prep other ingredients. Mix 1/2 cup of cranberries, 1/2 cup lightly candied pecans or other nuts of your choice, 2 Tb. of Pomegranate seeds, and approx 8 more sliced apples pieces + 8 more slices of onion. When ready to serve, mix the spinach with the marinated apples and onion. Lightly toss in the remaining ingredients.

Place a serving of salad on each plate and spoon approximately 1/2-1 cup sweet potatoes on top.

Garnish with more of the apple, onion, pecans and pomegranate seeds to add color and beauty.
